In light of the holiday season, I wanted to share with you a salad I made for our family Thanksgiving dinner over the last week. And while I know it’s probably too late for you to prepare this for your own Thanksgiving feast, we still have at least two more holidays coming up and I thought perhaps you might find it suitable for either Christmas or New Year’s.
Apple Walnut Salad
1 Cup Feta Cheese
1 Cup Walnut Pieces
1 Cup Reduced Sugar Dried Cranberries
16 oz. Mixed Spring Leaves or Spinach
2 Braeburn Apples (chopped with skin on)
Salt and Pepper (to taste)
I absolutely love this salad and have made it many times. I really like it as an option to prepare ahead of time. To prepare ahead of time, layer the salad in a large bowl in the following steps:
2. Layer next the feta cheese and cranberries.
3. Next, layer the salad greens.
4. Last, add the walnuts on top to keep them dry and from getting soaked in the apple juices.
5. Toss salad at time of serving.
I think this salad pairs so well with most holiday dinners. It is both sweet and savory, while still offering a light, but healthy side for the many indulgences during the holiday season. Enjoy!
